Performance and Application
Tween 81, also known as polysorbate 81, is light yellow to amber oily liquid at room temperature. Soluble in ethanol, ethyl acetate and toluene, slightly soluble in mineral oil and vegetable oil, and can be dispersed in water. It has the properties of wetting, foaming, diffusion, emulsification and stability. It is an O/W emulsifier with an HLB value of 10.0. It becomes gelatinous at low temperature and recovers after heating. It can be used as emulsifier, solubilizer, suspending agent, lubricant, etc. It is also used as a component of nylon and viscose curtain oiling agents. Used as an emulsifier in the production of polyurethane foam. Food-grade Tween 81 is used as an ice cream emulsifier in the food industry. The dosage is 0.1% of butter, and the amount of general oil is about 1%.
